Ingredients
  1. 1 T. Olive Oil
  2. 1 lb. ground turkey
  3. 1/2 - 1 tsp. salt
  4. 1/2 tsp. cumin
  5. 1/2 tsp. dried oregano
  6. 3-4 green onions, chopped (other onion works too)
  7. 2 large carrots, grated or finely chopped
  8. 3 c. sliced kale
Instructions
  1. Heat oil in large skillet over medium heat.
  2. Add turkey, salt, cumin, and oregano.
  3. Saute for 3-5 minutes.
  4. Add onions, carrots, and kale.
  5. Continue to saute until vegetables are tender, 5-7 minutes.
  6. Add more seasonings as needed.
