Ingredients
  1. 2 cups corn
  2. 30 cherry tomatoes, halved
  3. 1 can (15 oz) black beans, rinsed and drained
  4. 2 avocados, diced
  5. 1 red bell pepper, diced
  6. 1 red onion, diced
  7. 1/3 -1/2 cup cilantro, chopped
  8. 1 small jalapeƱo, diced (optional)
Dressing
  1. 2 T. Olive oil
  2. 1 large or 2 small limes, juiced
  3. 1 1/2 - 2 tsp cumin
  4. 1/2 tsp salt or more to taste
  5. 1/2 tsp pepper or more to taste
Instructions
  1. Prep all the veggies and place in a large bowl.
  2. Whisk together dressing ingredients and pour over veggies.
  3. Stir to coat evenly.
  4. Serve alone, over chicken, with toasted pita bread, or tortilla chips.
Notes
  1. This is best if made ahead of time and is allowed to sit for a couple hours to let all the flavors meld.
  2. If making ahead of time, can add avocado at last minute or omit.
