Mango Black Bean Salsa


I may or may not have finished off this recipe by myself in about 2 1/2 sittings. I say 1/2 because if the bowl had not been empty I would have eaten more. 🙂 I ate it on salad, with chips, and over quinoa but I bet it would be great over chicken or fish or mixed with other veggies as a side salad! Perfect for spring/summer meals and snacks!

Mango Black Bean Salsa

(Measurements can vary based on what you have)

3-4 mangos, diced (see pictures below)
1 cup red pepper
1 can black beans, drained and rinsed
1 small onion, chopped
Salt
Pepper
Cumin
Garlic powder
Lime Juice

Mix together mango, red peppers, black beans, and onion. Sprinkle on spices and lime juice to taste.

Serve with tortilla chips, on a salad, over rice, quinoa, fish, or chicken.

Here’s an easy way dice a mango:

The seed is in the middle so slice in thirds.

Take the outside thirds and dice (don’t cut through the skin).

Scoop out the mango chunks with a spoon.
