Caramel Chip Bars


Disclaimer: These are not considered healthy, but they sure do taste good!

Just don’t eat them all at once and share a few with your friends! 🙂

Caramel Chip Bars

2 cups white whole wheat or whole wheat flour
2 cups oatmeal
1 cup butter, melted
1/4 cup brown sugar or sucanat
1/2 tsp baking soda
1 cup chocolate chips
1/2 cup nuts, chopped (optional)
Caramel Sauce (See below)

 

Caramel Sauce:
1 cup brown sugar or sucanat
1/2 cup heavy cream
4 T butter
1/4 tsp salt
1 tsp vanilla

 

Mix together flour, oats, butter, sugar, and baking soda. Press 2/3 of the mixture into a 9×13 inch pan and bake for 10 minutes at 350 degrees.

 

While crust is baking make caramel sauce by placing sugar, cream, butter, and salt in a small saucepan. Place on medium heat and whisk 5-7 minutes or until it thickens and boils. Add vanilla and stir for 1 more minute. Remove from heat.

When crust is done, sprinkle chocolate chips on top, then nuts. Pour caramel sauce on top of nuts and sprinkle the rest of the crust over the caramel sauce. Bake at 350 degrees for 15-20 minutes or until crust is golden brown.
