Turkey, Kale, Carrot Stir-Fry


I was pretty skeptical of this recipe before trying it, but was surprised at how much I liked it.

It has become one of my staple one-pot meals!

Works great for most elimination diets.

Ingredients
  1. 1 T. Olive Oil
  2. 1 lb. ground turkey
  3. 1/2 - 1 tsp. salt
  4. 1/2 tsp. cumin
  5. 1/2 tsp. dried oregano
  6. 3-4 green onions, chopped (other onion works too)
  7. 2 large carrots, coined
  8. 3 c. sliced kale
Instructions
  1. Heat oil in large skillet over medium heat.
  2. Add turkey, salt, cumin, and oregano. Saute for 3-5 minutes, or until turkey is almost cooked.
  3. Add onions and carrots. Continue to saute 3-5 minutes.
  4. Add kale and cook a few more minutes until vegetables are tender.
  5. Add more seasonings as needed.
Notes
  1. Works great on most elimination diets or for people with multiple food allergies/sensitivities.
