Roasted Cauliflower & White Cheddar Soup

Roasted Cauliflower & White Cheddar Soup

Ingredients
  1. 3-4 slices bacon, chopped (optional)
  2. 1 head cauliflower, cut into small pieces
  3. 1 onion, diced
  4. Salt and pepper to taste
  5. 2 cloves garlic, minced
  6. 1/4 tsp thyme or 1 tsp fresh, chopped
  7. 3 cups broth (chicken or vegetable)
  8. 1 1/2 cups aged white cheddar cheese, crumbled
  9. 1 cup milk or cream
  10. Salt and pepper to taste
Instructions
  1. Place chopped bacon in a large skillet. Cook about 5 minutes.
  2. Add cauliflower, onion, salt, and pepper. Cook 5-8 minutes or until vegetables are slightly tender.
  3. Add garlic and thyme. Sauté for about 1 minute.
  4. Add broth and bring to a boil. Reduce heat and simmer for 10-15 minutes.
  5. Mix in cheese and milk. Heat through until cheese is melted.
  6. Season with additional salt and pepper as needed.
Notes
  1. If you don't use bacon, just add a tablespoon of oil to your pan and start with cauliflower and onion.
