Who doesn’t need a quick granola bar recipe for an easy on-the-go snack. I made these recently for a road trip with my family. They were a little crumbly because I didn’t smash them in the pan as well as I usually do and because sometimes I don’t measure very carefully 😉 , but they usually turn out great!
I used chopped peanuts as my mix-in for this batch but the options are endless! You can also make these gluten free if you use gluten free oats and don’t add any wheat germ!
1/2 c. honey
3 T. butter or coconut oil
1/2 cup peanut butter
1 tsp cinnamon
1 1/4 tsp vanilla
3 1/2 c. oats
1/4 c. ground flax seed (optional)
1/4 c. oat bran or wheat germ (optional)
1 c. mix-ins (dried fruit, nuts, seeds, chocolate chips etc.)
Melt honey and butter together.
Remove from heat and stir in peanut butter, cinnamon, and vanilla.
Stir in dry ingredients and mix well.
Press FIRMLY into a greased 9×13 inch pan. Let bars cool and firm up.
Cut into bars and store in an airtight container or wrap individually to grab and go.
These freeze well.
