Chocolate. What’s not to love!? Okay, maybe not all the refined sugar that usually comes with it, but with this recipe you can have both gooey-chocolaty goodness and no added sugar! I had been wanting to try this recipe for a long time and finally got around to it……boy, am I glad I did! These don’t take much time and taste vert similar to chocolate no bake cookies! Just don’t eat them all at once!
1 c. dates
1 T. water
1 c. oats (could use pecans, walnuts, or almonds instead)
1/4 c. cocoa powder
1/2 c. peanut butter or almond butter
2 tsp. vanilla
1/4 tsp. ground cinnamon
1 tsp honey (optional)
(I’ve also added a couple tablespoons of ground flax seed to these with a little extra water. Still taste great with the added fiber and omega 3’s!)
Cut dates in half and remove pits. Soak them in water while you make the rest of the recipe.
Place oats in food processor, and process until they are finely ground. Add the remaining ingredients to your food processor (add drained dates last).
Process until mixture is completely combined. It will form into a dough-like mixture.
Coating ideas: chopped nuts, cocoa powder, chopped chocolate, coconut, or sesame seeds.
Makes about 15, 1 inch balls
