Peanut Butter Baked Oatmeal (& Bars)


A higher protein version of baked oatmeal.

These also stick together well and can be cut into bars for an easy grab & go breakfast or snack.

These are naturally gluten and dairy free if you use gluten free oats.

Ingredients
  1. ½ c. peanut butter (or can sub other nut butter)
  2. ½ c. coconut oil, melted
  3. ½ c. applesauce or smashed banana
  4. ¼ c. honey
  5. 2 eggs
  6. 1 tsp vanilla
  7. ½ tsp cinnamon
  8. 2 c. oats
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease an 8x8 baking dish.
  3. In a large bowl, mix together peanut butter through vanilla.
  4. Add cinnamon and oats and stir to combine.
  5. Pour mixture into prepared pan and smooth evenly with a spoon.
  6. Bake for 25-28 minutes or until edges are lightly browned.
  7. Cool on a wire rack.
  8. Cut into squares.
Notes
  1. May need to soften the peanut butter if not using natural as the natural is typically more runny.
